What opacity should I use to deter theft but keep photos presentable?

An opacity of 30–40 % is a good balance. The watermark is clearly visible on close inspection but does not overpower the image when viewed at normal size in a portfolio or gallery.
Can I tile the watermark across the entire image?

Yes. Enable the Tile option to repeat the watermark in a diagonal pattern across the full image. This is the strongest protection against cropping out a single watermark.
